This rich chocolate ice cream is great even if you typically avoid dairy products. Since it uses clarified butter or ghee you get the creamy texture and great taste of a dairy-based ice cream without any of the allergenic lactose or milk proteins.⠀
- 2 cups almond milk⠀
- 4 egg yolks⠀
- 7 Tbsp clarified butter or ghee (liquid)⠀
- 4 Tbsp avocado oil⠀
- 1 tsp vanilla⠀
- 1 scoop (30g) Active Stacks chocolate protein powder⠀
- 1 Tbsp collagen powder (or additional beef protein powder)⠀
- 5 Tbsp xylitol or other sweetener⠀
- 3 Tbsp cocoa powder⠀

Blend all ingredients. Add melted-and-cooled butter/ghee and oil during blending and add all powders during blending (Note: If you have a powerful blender like a Vitamix you can get away with adding all ingredients to the pitcher at once before blending.
For less powerful blenders adding ingredients *during* blending results in a smoother mixture and ice cream). Mix in ice cream maker until you've reached your desired consistency.
