Vanilla Protein Ice Cream (Lactose Free)

If you've tried the chocolate protein ice cream recipe you know how rich and creamy it is. Today we have the vanilla version. It's great on it's own or with added toppings.⠀

  • 2 cups almond milk⠀
  • 4 egg yolks⠀
  • 7 Tbsp clarified butter or ghee (liquid)⠀
  • 4 Tbsp avocado oil⠀
  • 1 tsp vanilla⠀
  • 60 grams Active Stacks vanilla protein powder
  • 4.5 Tbsp xylitol or other sweetener ⠀
  • 1/2 tsp ground vanilla bean⠀

Blend all ingredients.

Add melted-and-cooled butter/ghee and oil during blending and add all powders during blending (Note: If you have a powerful blender like a Vitamix you can get away with adding all ingredients to the pitcher at once before blending.

For less powerful blenders adding ingredients *during* blending results in a smoother mixture and ice cream). Mix in ice cream maker until you've reached your desired consistency.⠀
